Functions and Capabilities

This laboratory mainly focuses on development of functional foods and assessment of their health promotion and disease risk reduction properties using in vivo and in vitro tests. Furthermore, we perform studies related to determination of antioxidant activities and bioavailability of food products as well as characterization of bioactive and phytochemical compounds from plant-based products. The analyses performed in our laboratory are as follows:

  • Total phenol (polyphenol)
  • Total antioxidant activity (ORAC)
  • Total anthocyanins
  • Condensed tannins
  • Flavanols (catechins)
  • Phenolic acids
